What is your risk for a virus or data theft on a Mac that is not connected to the internet or a network? I'm not sure I see a need for AV software. Assuming you would only ever connect to the Mac App Store for software, I don't see where the attack vector is meant to come from (save for USB thumb drives) or how it would transmit it's hijacked data considering it's meant to be kept offline. A well maintained Time Machine back up could supplant this need if the machine were ever compromised by simply rolling it back 24-48 hours.

Unfortunately none are a simple answer, the best would be connecting the infected Macs hard drive to a clean Mac with up to date AV and scanning but this requires removing the hard drive which is more work than it should be. I’m surprised there aren’t tools like ESET SysRescue Live CD or Portable Apps ClamWin for Mac. It’s frustrating. In the end I did connect the Mac to the internet long enough to download the Sophos and Malwarebytes packages.

I’m even surprised TechTool doesn’t have this capability. Hello, I'd think the ESET SysRescue Live CD would work--it's Linux-based, these days, as opposed to the old WinPE version ESET used to offer. It might be one of those things where it has to first be booted from to download an update, and then the new USB drive can be booted from. Daniel (ESET) could probably shed some light on this.
